Not all night vision goggles are the same.  Goggles can come in monocular, bi-ocular, or binocular configurations.  Bi-ocular goggles are a hybrid between a binocular and a monocular whereby you can look with two eyes but there is only one night vision tube being used.  The image is then sent into each ocular independently.  Here are some images to make it easier to visualize:

Cheapest variation of night vision goggles within each class level.  Monocular night vision goggles cover one eye only.  There is only one night vision tube inside and you have to learn to operate with night vision image in only 1 eye.  These devices are popular due to their compact design and also because they are often capable of serving as a multipurpose monocular.  For example most high end mono goggles can also be mounted on a weapon, attached to a photo camera, adopt a magnification lens or simply be handheld.  The best known example of a monocular is a PVS-14 wearable night vision goggles mounted to a headgear set or a helmet.

Bi-Ocular Night Vision Goggle

Bi-ocular night vision goggles are very popular in civilian use as well as military applications.  These devices offer the best of both worlds - single night vision tube for reduced cost and dual oculars so you can view things with both eyes. PVS-7 is a very popular modification of such night vision goggle.  These devices are often mounted on a tripod but never on a weapon.  There are often optional magnification lenses available for bi-ocular goggle to turn them into a long range viewing device.  It is never a good idea to walk around with a magnified optical device in front of your eyes however.  This is a sure way to fall.

Binocular Night Vision Goggle

Binocular night vision goggles are the most expensive option within each night vision generation category.  This is because there are two night vision tubes used in each set.  The main benefit of having a true binocular night vision set is the field of view.  Dual tube goggles in general provide a wide viewing angle than the bi-ocular ones and certainly wider angle than the mono goggles.  Another side benefit is that if one ofthe tubes burns out, you can always use the second one as a monocular until you are able to repair the damaged tube.
